pina colada smoothie
I'm a green smoothie purist during the week. But, on the weekends, I can be convinced to indulge in something a little less vegetable-y.
This smoothie has all the flavours of a pina colada and the substance to fill you up on your way out to do awesome weekend things. Best of all, it's dairy free, sugar free, low in fat and a pretty sunny shade of yellow.
Perfect pick-me-up for a winter's day.
Ingredients
2 cups frozen pineapple
2 small bananas or one large banana - cut into chunks (you can also freeze your banana chunks the night before to make this even colder)
2 cups unsweetened coconut milk - NOT canned coconut milk. (I recommend Silk Coconutmilk or So Delicious Coconut Milk Beverage)
juice of one lime
Method
Add all ingredients to your high powered blender or bullet blender and blend until smooth. if the mixture is too thick, add more coconut milk. makes two nice sized smoothies.
