Beet Breakfast Smoothie

As the week draws to a close, I often run out of green things I need to make my morning smoothies. Going without a smoothie (and wolfing down a breakfast burrito) is definitely an option. However, whenever possible, I try to stick to the quick and portable liquid breakfast. This blazingly pink beet smoothie is a great way to keep your breakfast routine on track, even if you're left with the end of a cucumber and there is no celery in sight. Beets are incredibly good for you - high in fiber, iron, copper, magnesium and vitamin C and they bring a nice sweetness and earthiness to this delicious (and beautiful) morning drink.

Ingredients

1 raw red beet - peeled and cut into chunks

1 cup baby kale or chard - packed

1/4 cucumber peeled 

1 small yellow kiwi

1 cup frozen fruit of your choice 

2 small bananas or one large banana - cut into chunks (frozen or not)

2 cups cold water 

Method

1. in a high powered blender, add greens, cucumber, beets and 2 cups water. blend until smooth. mixture will be really watery.

2. add banana, frozen fruit and kiwi. blend until smooth. If the mixture becomes too thick, add a little more water.
