Sticky rice
Ingredients
1 cup Japanese sticky rice - I use Sekka rice
1 1/4 cups cold water
Method
1. wash rice in a fine mesh strainer, under cool water, until the water runs clear. place in rice pot.
2. add water and let rice soak for minimum 15 minutes - maximum 30 minutes
3. turn the flame on high heat. when rice begins to boil, turn the heat to low and cover. cook 15-20 minutes or until all of the water has been absorbed.
4. turn off the flame and remove rice pot from heat. take off pot lit and cover the top of the pot with a clean tea towel. place lid on top of the towel and let the rice steam 5-10 minutes.
5. eat.
